You will begin with reviewing the tools and ingredients needed, the steps for creating the roll, and then watch a short video on a demonstration of creating the California Roll.   • Crab mix (crab salad) - small handful
  • Sushi rice - about the size of a small orange or large lemon
  • Cucumber - 2 slices
  • Nori (seaweed) - 1 sheet
  • Sesame seeds

Steps for Creating the California Roll

  1. Grab a ball of rice, about the size of a small orange or large lemon. 
    • NOTE: Too much rice will make it hard to close the roll.
  2. Put the ball of rice on the center of the nori and place on top of the makisu.
  3. Pull the rice to edges of nori and spread evenly to the edges of the nori. 
    • NOTE: Don't use too much pressure. Dense spots of rice will occur and spreading evenly will be difficult.
  4. Sprinkle sesame seeds on top of rice.
  5. Flip the nori and rice over, so that the rice is face down on the makisu. Pull the nori to the bottom edge of the makisu.
  6. Place avocado and cucumber slices length-wise on top of the nori.
    • NOTE: Keep the ingredients towards the center of the nori.
  7. Grab a small handful of crab mix. Evenly spread it length-wise on top of the avocado and cucumber slices.
  8. Put fingers on top of ingredients. Use thumbs to pull the makisu up and over, starting to roll up the ingredients. This will give you the first seal. Lift up the top edge of the makisu and pull it, continuing to roll the roll over for the final seal.
    • NOTE: With each seal, you will apply a little pressure, but not too hard, as ingredients will fall out of the ends and/or the roll will look smashed and uneven.
  9. Use the makisu to tap the sides in, by placing it over the roll and using your hands to tap the sides. this step is important for the presentation of the roll.
  10. Cut the roll in to 8 even pieces. Start by cutting the roll in half. Then with the two halves parallel to one another, make three more cuts, ensuring that the cuts produce even pieces.
  11. For presentation, angle the pieces approximately 45 degrees on top of one another. The last two rolls should be flipped over so that the ends are not facing up. This keeps a consistent and clean presentation.
  12. Plating the rolls - Use approximately one teaspoon of wasabi and one tablespoon of ginger.
